Tonight I decided to try Stephanie's Easy Satay:
complete with black rice, and it turned out amazingly. I really can't sing the priases of this recipe enough - it turned out spicy and flavorful but not too spicy, and the peanut sauce was just peanutty enough without essentially being melted down peanut butter.
I found I got pretty good results letting my rice cooker have at the Black Rice, and after putting that in tossing the chicken in the spices and putting them in the fridge to let the flavors pull together a bit before grilling.

Another beautiful shot of the soft tacos I made tonight. They were delicious, and are now in my stomach.
Oddly enough, I made far too many and now have leftovers! Shrimp on the left (not that you can see the shrimp) and chicken on the right. :D

Tonight i decided to make tacos. Homemade baja soft tacos with chicken and shrimp, complete with fresh guac and pico de gallo.

This is how they turned out. I only wish the photos betrayed how delicious they were!

One of the nice things about these is that they take exactly as long to cook as my DDR workout - so I put them in the oven, hit the DDR pads, and when the timer goes off, I know I'm done on both fronts!
