could anchovies be the best thing ever?

anchovies totally rock, you should try some. In a nicoise salad might be a good place to start.

That sounds pretty good. Although I'm not sure about trusting someone who refers to a spice blend as his "Essence"...

I'd recommend: lettuce/chinese leaf, tomato, spring onion, tuna, olive oil, salt, pepper, basil, anchovies, olives, dash of vinegar.

it's my new favourite salad.

That looks gorgeous...and I agree about anchovies love 'em.....but only brown "tinned' ones cannot abide the 'white' or 'silver' ones that are so fashionable in restaurants at the mo.........
