I think you would enjoy it G :) I'm not sure how the maple syrup is specifically organic, but perhaps they don't spray the trees with any insecticides.

I don't know what "organic" means, in that case. We did come across it on a jar of honey recently and the label justified it by stating "prepared to organic standards", whatever that means. Looks like just another shallow marketing ploy.
