Tell me oh wise ones, apart from pancakes, does maple syrup have any other
uses? This was a gift from someone who spent Christmas in Canada.

I put in baked beans instead of molasses sometimes, it goes into lots of baked goods, and I recently found a recipe online (www.chow.com?) for a spinach and endive salad that calls for blue cheese, pecans and a touch of maple syrup in the dressing...

I put it in vinegar/oil salad dressings,marinades, like facto in beans--but mostly it just gets sneaked from the fridge.

Put three teaspoons of it in a cup, mix with equal amounts of malt vinegar and a squeeze of lemon, salt & pepper to taste.
Smear this mixture on bread and toast under the grill.

(Try it on BS & DD, I love to know what it tastes like)

Make quite an astringent dressing with olive oil & lemon/ lime (mix with a little of your vinegar of choice).
Add crushed garlic, chopped red chillis/ plenty of minced garlic, a little soy sauce/ tamari & a good dollop of maple syrup.
Use this as a marinade for anything from tofu to pork.
