No, you're right, a failure. didn't whisk it enough first, and cooked it too low in the oven.

It happens. Also some ovens just don't do meringue v well. If this proves to be the case, use unbleached (vanilla) caster sugar & leave out any salt or cream of tartar. Whisk til your rotator cuff squeals & proceed to oven as normal.
Gooey-centred caramel meringues ensue.

did you eat it anyway?

i would have done!

mason says try putting a little vinegar in your meringue mix.. about a teaspoon of balsamic or red wine vinegar to a 6 egg meringue... :)

It only came out the oven this morning (left it on low overnight... but oo low. Wanted that really nice dried-out kind of merange...) so it was a bit early in the day to be consuming that much sugar.

Like the idea of the vinegar - I assume it's for the acid - might give the tartar stuff a bash first.

Mmm, much tweaking and fun to be had.

You should mark sucess on its crispiness. Was it suitably crispy

seaneeboy says:

Sadly it was not. It had the consistancy of snot that had gone a bit crunchy on top. And it wasn't sweet enough. Rub ish.
