I was a little worried about the custard going lumpy but it's perfectly smooth and Yum!

oooh, looks nice. did you do your own custard with eggs and whisks and stuff? I have about a 50% hit rate with proper custard curdling (although when it does go horrible, just strain it and say it's creme anglais)

mat - I did indeed. from what I can tell the main thing to do is make sure the cream isn't too hot at first when you're pouring it onto the eggs. just up so a bit of steam is coming off it. Must be a right bitch to do with your RSI, but you could start it off in your mixer I'spose?

One last tip - once you've whisked the cream over the eggs pop it back in the pan off the heat and VERY SLOWLY bring the heat back up. while whisking like a bastard.
