Pineapple-coconut cupcakes with lime cream cheese frosting.

Maybe when we get in the new house with an oven I can trust to maintain a temperature I'll bake. More likely, I'll pass the recipe on to mom and she can bake them for me. ;). @foodporn as usual?

one stick of butter.
@1.5 cups sugar (test it as you go.)
2 eggs
3tbs lime juice
1/2 can cream of coconut
@1/4 large can crushed pineapple
(*I* used the heavy syrup kind, because it was purchased by accident. I *recommend* the kind in pineapple juice instead.)

I USED 1 3/4 cups flour. When I make these again? I'll up it to about 2, 2 1/4. There's a LOT of fat in these due to the coconut- I'd up the flour content so they're not as sticky.

1 tsp baking powder
1tsp salt
1tsp baking soda
@1/4 cup (maybe less) milk

cream butter and sugar together
add the eggs, one at a time, til blended. Add the rest of the wet ingredients together.
Mix all the dry ingredients together, add to the mix... blah blah blah, the usual details.

350 @22min. Makes more or less 18 regulars.

for the icing, it's a package of Philly creamcheese, about 1/4 cup of powdered sugar (you don't want this to be sweet- the cupcakes are PLENTY sweet.)
1/3 cup lime juice
stick of butter

Whip til it's food. Spread on cooled cakes. Top with crushed pineapple (or whatever you have lying around.)

540- I had a can in the house I had to use up. Fresh would have been much nicer.
