Hopefully this will help clear my sinuses. It comes to the table still boiling.

At the most basic it is kimchi (the kind that is older/more fermented is better for this), water, and onions.

The most common homestyle forms I think are served with canned tuna or pork.

At this restaurant I ordered kimchi stew with pork. You start by cooking with the pork, so that makes the water more of a pork broth, than plain water. Here they also happen to add tofu and ttok to the stew.

It has a lot of flavor, a vinegar bite and well as a touch of red pepper heat. but Korean food isn't spicy in the way Thai food is spicy.
