Fresh Pizza

Went to the effort of making my own crust for some lovely pizza. Fresh
tomatoes and mushrooms, with anchovies and capers. It was heavenly.

I really should do this more often. Not like making pizza crust is hard.

It was worth it. The two of us ate the whole thing. Such piggies! (It filled a whole normal sized cookie sheet)

A fair bit better. Still congested, but I can breathe through my nose now so that's a plus. Thank you.

I find it difficult to stretch out thinly enough - it keeps springing back... more kneeding perhaps?

Spring is good. Means you've kneeded enough and the gluten is hard at work being stretchy.

What I do to get it mostly there is to put it onto a non floured surface and stretch it out. I say non floured because then it'll stick a little to the surface and not spring back as much.
