With whole cherry tomatoes, bamboo shoots, glass noodles and spring onions. Stock took almost 48 hours to make. See Heston Blumenthal's method* for ice clarification. Almost worked too. Except I didn't have a muslin bag, so had to use the less-fine "pair of tights" method, hence slight non-clearness.

Looks great! I love duck... We once used the "pair of tights" method when making crab apple jelly. The problem was that the tights expanded under the weight of a huge saucepan-full of crab apple mush, so we had to hang them from the ceiling. Just above floor level, two huge balls (!) gently swung to and fro as the jelly slowly dripped out during the next day or two... pity I didn't have a camera in those days. (the tights and the crab apples were flesh-coloured, I should add...)
