Recipes -

Gumbo: saute onions, celery, spring onions, green pepper with a little chilli and garlic until soft. Add shrimps and croc tail chunks, tin of tomatoes. After boiling lightly in seperate pan, add okra. Cover and simmer for at least half an hour. Serve over rice.

Kangaroo Salad: cook steaks to medium rare (or to taste) and set in warm place to rest. Meanwhile, toss together boiled potatoes, lightly pickled beetroot, walnuts, rocket, salt pepper. Slice steaks into medallions, stir into salad. Dress with olive oil and a splash of lemon juice.

Tagine: Marinade chunks of meat in ras al halout spices (cumin, coriander, garlic, rose petals, mace, cinnamon etc) and olive oil. Fry gently with onions, carrots and garlic. Add tin of tomatoes, chopped dates, chopped apricots, fresh oregano, almonds. Cover, simmer for at least an hour. Add more oregano before serving over cous cous, and use ground almond to thicken if too thin. If you've got any of them nice brine-pickled lemons, chuck some of those in too.

Reindeer steak served in creamy pepper sauce made by deglazing cooking pan with milk, adding crushed tricolour peppercorns and lumps of dolcelatte.

If anyone needs quantities, make 'em up - 'cos that's all I ever do. :)

The best way to cook. Sometimes I have to guess when I write out my recipes since I almost never measure things unless I'm baking.
