To the potatoes being ready to dig up. It's usually two to three weeks after flowering :)
That's interesting. I'm not really an expert in these matters (despite being Irish), but my wife comes from a farming background and that's what she tells me :)

maybe just for certain varieties. I think we were digging up Desiré before flowering.
You are almost certainly right that it is variety dependent. One place I found said don't dig them until the stalks start to go yellow, in September or October :D
I always been told and read that you dig up new potatoes in July time (but you have to check that they're ready first) and you harvest maincrop potatoes when the leaves die down. I hope this helps.
