This soup is wonderful I like soups with stuff in them, rather than just a purified liquid. Inspired from an amazing soup that I had at The Eagle one time, I was feeling really ill yesterday - headache, feeling sick - and not to do with alcohol or any other abuse. Somehow I thought my body must need some real deep nourishment after my week of quick snacks and city building.
150g Cherry tomotoes
250g Plum tomatos
1 can chopped tomatoes
Big handful of basil
1/2 cup water
3 inchs of baguette (yesterday's leftovers is best)
4 cloves garlic
1 small red onion
1/4 cup olive oil
bit of sugar
Put oil in medium pan, add the thinly sliced red onion and cook until
Add the smashed up garlic, and thinly sliced chilli, cook until just
softening then add the can of chopped tomotoes.
Chop the cherry tomotoes in half, quater the plum tomotoes then add them to the pan, leave half the plum tomotes to add later. Got to have big chunky tomoto bits in here.
Add a little bit of sugar to help bring out the taste of the tomotoes
(around 1 teaspoon), and season well.
Chop the bread roughly and soak in water. Let the soup simmer and the bread soak for 20 mins.
Taste the soup and season more if neccessary...then take the bread out of the water and add to the soup. Stir in softly.
5 minutes later, add the rest of the plum tomotoes, stir in gently.
Another 5 mintues, turn the pan of the heat, roughly chop the basil and add it to the soup, stir it around a bit.
Add parmegiano to the top of the soup if you wish.
