This old reliable recipe came from "Favourite Pudding Recipes" by Salmon Press (available from all UK National Trust knick-knack-bric-a-brac shops), I've made it a few times now, very popular & my contribution for tonight's household Christmas party (pre-cooked ready for re-heating and serving with double cream in jugs later).

When first I made it, thought it might taste rubbish as only included cocoa (so had 70% choc on standby) but fears were groundless - such an easy yum recipe, try it!

Chocolate Fudge Pudding

PUDDING -
4oz butter
4oz caster sugar
2 medium eggs
3oz self-raising flour
2tbsp cocoa powder (choose the best you can, all I could find was Green & Black's, worked supafine)
1/2tsp vanilla extract
1-2tbsp milk
SAUCE -
4oz dark brown muscovado sugar
2tbsp cocoa powder
1/2pint boiling water

Set oven to 375F/190C/Mark 5. Place all pudding ingredients into a bowl and beat well to a soft consistency. Using a spatula, spread this lightly & evenly into a lightly buttered baking dish. Combine all sauce ingredients, mix well, pour this sauce over the pudding mixture in its baking dish. Bake for 40 minutes. I serve this straight from the dishes - serves 6.

Just to clarify, the above picture shows the doubled recipe I used to serve the 14 we're having along tonight - as I also bought a pre-made Italian panettone .
