In my workshop I teach on entertaining and design ideas from around the world, I have a class coming up and I will serve delicious endive with crab.
Here is the recipe for you to enjoy:

1 lb of lump Crabmeat picked over for any cartlidge.
1/4-1/2 cup of mayonnaise, depending on your preference
1 celery stalk finely chopped
1 1/2 Tablespoons of Capers, that have been drained.
1 1/2 Tablespoons of Fresh Dill, chopped fine
Juice of half a lemon(optional)
salt and freshly ground pepper to taste
4-5 heads of Belgian Endive that have been cleaned and seperated.
Carefully combine the above ingrediants
Cut of the base of the Endive and seperate the leaves. Fill them with some of the crabmeat salad, cover and chill and then serve at your party.

I plan to serve this as the simple "snack" that my students will sample before our class, with a nice glass of wine. I would chose a crisp white with this, perhaps something delicious from the Loire region of France. I'm sure your local wine shop can pair a beautiful wine with this delicious and elegant appetizer
