oh, yes, maple syrup time

On my travels I came upon an old-fashioned maple syrup tapping. The sap tastes vaguely like maple syrup. It takes a huge amount of sap to boil down to maple syrup. I once took the wall paper off a house by boiling my own.

How long does it take for the tree to produce enough for it to be worth boiling?

yes the SAP is good for you. The tappers told me that and gave me a cup--drink all you want, it's good for you. In our house, maple syrup has always been considered medicinal. Anyone swigging a bit has always been treated kindly.
