No recipe. It was soft mashed potato made into log shapes. Then rolled in some very dry gritty maize called breading corn. But I suppose polenta would do. I'd like to get the coating thicker but not sure how to get a deper layer on.
No flour/whisked egg like, say, you would with fish cakes?
No egg just this ground up maize. It did work better than breadcrumbs because it is smaller and drier. I'd like to buy those Panko breadcrumbs which are suppose to be good for this. The damp mash made the crumbs stick
