I didn't disobey, just improvised. I didn't have time to go hunting for fresh wild mushrooms, so I made do with those gret big field mushrooms. I did grill them, but mixed them in a bit earlier than Jamie suggests. My risotto is definitely a different colour to Jamie's.

I did put in rehydrated porcini mushrooms.

The pine nuts were my addition and the asparagus was tossed in butter and lemon juice.

H, I fell from vegan grace two years ago, shortly after my vegan boyfriend dumped me (man, that slice of pizza was good). Although cheese etc really is no good for me.

This dish would work very well converted to vegan. Only butter and the parmesan pollutes it.

If you were vegan for more than 2yrs, you're officially weaned & your lactase gene has turned off, so dairy will tend to disturb your digestion. As another reformed nutmuncher, I reckon a really good stinky cheese is worth the discomfort. ;)

H, I didn't quite make a year of pure veganism, but I have had a rather restricted dairy intake for about ten years now.

Some cheeses are definitely worth it. The bluer and gooier the better, but the worse the suffering. It seems to be directly proportional.

M, I'll have to cook some up for you sometime, whilst it's still in season.

It's your young stinky cheeses you need to watch; the younger the cheese, the more lactose it contains. Anything with double or triple cream is of course multiplying your dose, but sometimes you just have to suffer for love.
Hard, very mature cheeses such as Parmesan are low in lactose & offer more calcium than other cheeses, yoghourts & whatnot.

I had noticed that soft cheeses and milk are the worst. But, oh, I do love a nice ice cream, if not the sore throat the day after.

Parmesan is my saviour. And you don't need much of it.

I try not to bother myself too much about the fact that most Parmesans are not vegetarian. Sigh.
