Apart from the strawberry milkshake pearls*, I made the whole lot. I'll be honest, this is the single prettiest dessert - possibly any meal - that I've ever made. I was very pleased with it.
* which is a very fancy way of saying "those things that come inside the milkshake straws you can get from the supermarket"

food magic chemistry. you got me at earl grey ganache pyramids. this is really amazing stuff.

The lemon salt/fructose topping is the killer on those. Super-sweet at first, followed quickly by almost shockingly sour, then the smooth sweet/bitterness of the cacao in the ganache comes through, with subtle bergemot notes on the finish. Also it looks like snowy-topped mountains.
Quite proud of that one.
